Gas pressure at a fireplace is tiny, measured in inches of water column, not the pounds you'd see on a compressor. There's the incoming line pressure and the manifold pressure at the burner. For natural gas, the burner typically wants about 3.5 inches; for propane, roughly 10 to 11 inches. The difference reflects the fuels — propane packs more energy per cubic foot and flows through smaller orifices, so it runs at a higher manifold pressure to deliver the rated BTUs.
Why it's regulated in steps
Your fuel doesn't arrive at burner pressure. Natural gas comes from the utility meter at a low pressure the appliance regulator trims to the final manifold setting. Propane leaves the tank far higher and is stepped down — usually a two-stage regulator arrangement at the tank, and often an appliance regulator too — before it ever reaches the fireplace. Each appliance also has its own regulator to lock the manifold pressure where the manufacturer specifies. Get any of this wrong and the flame either starves or over-fires.
It's set with a gauge, not by feel
