Why does my gas fireplace pilot light keep going out?
In Asheville, a pilot that keeps dropping out is almost always a tired thermocouple — the small sensor that proves the flame and holds the gas valve open — though on our older Montford and North Asheville masonry chimneys a cold-flue downdraft runs a close second. It's licensed work and usually an inexpensive fix.
Two housing stories, two pilot problems

The historic homes in Montford and North Asheville were built around open masonry fireboxes, and when a gas log set or insert sits in one of those tall old chimneys, a column of cold air can slide down the flue and knock the flame off the sensor — the pilot lights, holds a while, then dies on a still, cold night when nighttime temperatures still drop into the 20s well into spring.
Newer South Asheville construction runs sealed direct-vent units that never fight a chimney, so there the culprit is almost always the pilot components themselves aging out rather than any draft.
What the sensor is actually doing
That thermocouple has to stay wrapped in a healthy pilot flame to keep generating the tiny voltage that tells the valve to stay open. Let the flame thin out from off-season dust or a partly clogged orifice, or let the sensor weaken with age, and the valve reads 'pilot out' and shuts the gas the instant you release the knob. Because most of Asheville runs on steady natural-gas mains, pressure is rarely the variable — age and cleanliness usually are.
